What are some (very tasty!) gourmet recipes that have no cheese?

There are so many recipes with out cheese. What type of dish are you after?





Pan fried steak with garlic mash and steamed greens.


Coq au Vin with polenta or steamed new potatoes.


Roast meat and veg


Veal Schnitzel and Salad


Grilled mediteranean vegetable stacks with pesto


Steam salmon, shitake and bok choy with Japanese noodles





Any food that is prepared and presented with care can be gourmet.What are some (very tasty!) gourmet recipes that have no cheese?
crab cakes





1 pound crabmeat


1 egg, lightly beaten


1 1/2 tsp Dijon mustard


Cayenne pepper to taste


2 tbsp minced scallions


2 tbsp minced parsley


6 tbsp mayonnaise


2 tbsp fresh lemon juice


1 1/2 cups fresly made bread crumbs


1/4 pound butter


1/4 cup vegetable oil








In a large mixing bowl mix together the crab, egg, mustard, cayenne, scallions, parsley, mayonnaise, and lemon juice. Mix well, using your hands, and taste and correct seasonings as you are mixing the cakes.


The mixture should have a little bite and sparkle of flavor to round out the crab.


Pat the crab mixture into about 12 small cakes. Spread the crumbs on a piece of wax paper. Heat the butter and oil in a large skillet over medium-high heat.


Coat the cakes in crumbs on all sides, then put them in the hot fat and fry until golden, turning so all sides are crisp and brown 3 minutes on each side. Serve hot.

Stuffed Beef Tenderloin





Mushrooms Stuffing


3 ounces fresh mushrooms, finely chopped


6 tablespoons shallots minced


2 cloves garlic, minced


2 tablespoons Extra-virgin olive oil


salt and pepper to taste


2 teaspoons fresh thyme





In skillet over medium high heat saut茅 mushrooms, shallots and garlic in olive oil for 5 minutes or until all liquid is absorbed; remove from heat; add salt, pepper and thyme.

Beef Tenderloin Steaks


4 8 ounce, 1-1/2-inch thick Beef Tenderloin steaks


2 tablespoons butter





Cut a small pocket in side of each steak, stuff with cooked mushrooms mixture; secure with toothpicks. Season steaks with salt and pepper. In same skillet over medium high heat sear stuffed steaks in butter 5 to 6 minutes per side; remove from heat.What are some (very tasty!) gourmet recipes that have no cheese?
Make browned onion noodle kugels! I made them again this past Sunday because my nephew was coming for dinner and absolutely loves them. As a bonus, they reheat really well in the microwave! The recipe is from Gourmet magazine but found at Epicurious.com
