Looking for a good gourmet level marinara sauce recipe?

I want one that is made completely from scratch - that means nothing canned, nothing dried, nothing prepared - I'm looking for something 100% fresh! Im expirenced in the kitchen and have very good cooking skills, so the difficulty level isnt a problem - I also have access to high end produce and other items. Marinara sauce is just a classic tomato sauce - not much in the gourmet line but I agree it's better with fresh tomatoes and herbs for that super-fresh flavor. It's a very simple process...





3 tablespoons olive oil


2 onions, chopped


1 garlic clove, minced


2 1/2 cups peeled, seeded, diced tomatoes


1 tsp teaspoon oregano, chopped


1/4 teaspoon sugar


1 tsp basil, chopped


Salt and pepper





Heat oil in heavy medium saucepan over medium heat. Add onions and garlic and saut茅 until translucent, about 5 minutes. Add tomatoes, oregano, sugar and basil and simmer until thickened, stirring occasionally, about 1 hour. Season with salt and pepper.

';Gourmet level'; marinara? hmm...marinara by origin and culture is the complete opposite of gourmet. Its not supposed to be gourmet. Its not even supposed to be fancied up. Marinara is the simplest of tomato sauces containing nothing more then whole tomatoes (canned) and crushed by hand, olive oil, garlic, and some onion. You wouldn't even see basil or a 'trinity' of veggies used here, although you could if you really wanted.
