Need simple gourmet sandwich recipes?

I'm having a few friends over for brunch %26amp; need some gourmet sandwich recipes. I was thinking of using foccacia bread so they won't get soggy. I'd like to use prosciutto or salami, smoked turkey and mortadella or ham so I need some toppings %26amp; cheeses to go with the 3 different types of meats. Also, I'd like to use roasted red peppers for one type of the sandwiches. Any ideas?Need simple gourmet sandwich recipes?
Panino di Prosciutto e Fontina





Ingredients


2 to 4 slices (3 ounces total) fontina cheese


2 slices (1/2-inch-thick) rustic white bread


2 paper-thin slices red onion (optional)


Salt


Freshly ground black pepper


6 fresh baby spinach leaves


1 to 2 paper-thin slices (1/2-ounce) prosciutto


2 to 3 teaspoons olive oil


Directions


Place 1 to 2 slices of fontina atop 1 bread slice. Top with the onions. Season with salt and pepper. Then add spinach and prosciutto. Add the remaining slice(s) of fontina. Top with the second bread slice. Brush both sides of the sandwich with the oil.


Heat a grill pan over medium-low heat. Grill the sandwich until the bread is golden brown and the cheese melts, pressing down with a metal spatula or grill press, about 4 minutes per side.Need simple gourmet sandwich recipes?
Ham Spread


2 cans {4 1/2 ounces each} mushroom stems and pieces, drained


1 T butter


2 cans {4 1/2 ounces each} deviled ham spread


1/4 c chopped pecans


2 T mayonnaise or salad dressing


1 t horseradish


1/4 t garlic salt


Snack size rye bread





Cook and stir mushrooms in butter in skillet over low heat about 5 minutes; cool. Stir in remaining ingredients except bread. Refrigerate 3 hours. Garnish with snipped parsley. Serve with bread. Yields 2 c spread.
3 great sandwiches:





avocado, roasted red peppers, and the cheese of your liking. TOasted if possible.





Roast beef, cheddar cheese, lettuce, mayo





Peanut butter and jelly
Small tuna fish salad sandwiches using your usual tuna recipe, but add a half teaspoon of white horseradish (from the jar) to each 6 oz. can of tuna. Various breads will increase eye appeal.
